I’ve been having so much fun baking Shokupan lately.
This time, a purple potato version!
Can you tell how soft it is?
Toasted.
It really shows off the beautiful purple color when toasted.

Hi Reiko!
I love seeing all of your different shokupan flavor combinations 🙂 it seems very versatile!
I was wondering if you had a base recipe that you use? I’m sorry for always asking for recipes! I hope it is okay that I ask.
Thank you!
William

Hi William,
I use different recipes and I also constantly change things. But here is one of the recipes I use often…
12cm x 12cm x 12cm bread pan
210cc water (lukewarm)
4g dry yeast
25g sugar
3g salt
280g bread flour
25g vegan butter
395F 30 minutes.
