It’s a quickly prepared meal, but packed with big flavors!
I call it “risotto” but it’s rather risotto-like dish because I simply used cooked rice and added it to creamy corn soup.
But it works, and how can I complain when the meal is ready in 10 minutes.
I added a little cumin to the risotto, one of my favorite spices.
Served with tempeh, cilantro pesto, and radish slices.
It’s a hearty meal, but the ingredients are seasonal and suited for summer.
