We have an awesome neighbor, who is a foodie and shares his homemade pizza crust with us.
This morning I remembered we still had his crust in the freezer, so I decided to make pizza for breakfast.
Tomato sauce, hash browns, vegan meatballs (cut into small pieces and flavored with spices and herbs), vegan “eggs,” onion, and green pepper.
This is before going into the oven.
This is just out of the oven.
I added “cheese” a few minutes before the pizza was ready to come out.
So good!
This time I used different type of “cheese” for this pizza.
I added a few things (nutritional yeast, garlic powder, onion powder, sugar, salt, lemon juice, apple cider vinegar) to my homemade vegan mayo,
I loved how beautifully it browned.
It also kept the creaminess and did not dry out (like some nut-based cheese does).

Yum! We won’t be coming back to Minneapolis anytime soon. But once the world gets back to normal, if you’re ever in the Seattle area (we’re north 1 1/2 hours) or Tucson, we would love to get together. You’re a rock star! Your creativity is amazing!

Lori, You are too kind! We were in Seattle a few years ago, so I’m not sure how soon we will go back. But I will definitely let you know when we head out that way!
