Sunday morning is a good time for pancakes!
But you know me.
I can’t just make plain pancakes.
So I go to my tea bar and try to find something that would spice up our breakfast.
Earl grey is a good tea to drink, but it’s a wonderful tea to use for baking.
Here is another reason I was excited about today’s breakfast.

It keeps my coffee nice and warm for a long time, and I also like the feel in my hands.
Here is another new addition to our kitchen.
I make our vegan butter home, but I didn’t have a proper butter container.
So I was keeping our butter in a tall container, but my husband always wanted something shallower that would make it easier to reach and scoop the butter.
These earl grey pancakes were absolutely delicious!!
I’m writing down the recipe for this one.
Earl Grey Pancakes – two servings; makes about five small pancakes
1/2 cup (or more to achieve preferred thickness) almond milk
1 tablespoon white vinegar
1/2 cup all purpose flour
1/2 – 1 tablespoon ground earl grey tea leaves
1 tablespoon sugar
1/2 teaspoon baking power
1/4 teaspoon baking soda
a pinch of salt
1 tablespoon flaxseed meal
2 tablespoons water
1 tablespoon melted homemade vegan butter
canola oil for cooking
1. In a bowl pour almond milk and white vinegar. Let it sit for five minutes.
2. Add the rest of the ingredients and combine well.
3. Cook both sides until cooked through.
